This by no means is DIET food... but you can substitute lower fat items where needed. I have never made a low fat version but I bet if you use chicken breasts (w/ no skin or fat), low fat cream of chicken and low fat velveta you'd have a much lower calorie dish.
Ingredients:
1 whole chicken (or several breasts)
2 cans of ro-tel 'orriginal' (http://www.ro-tel.com/)
2 small cans of cream of chicken
1 pack of taco seasoning
Cumin
1 onion
several cloves of garlic (to taste)
1 block of velveta (can use ceddar)
1 bag of Tostito's (http://www.tostitos.com/)
Of course you can use generic of any of these items. ;-) I put links because I sent this recipe to someone else one time and they didn't know what ro-tel was.
Instructions:
Boil chicken with 1 can of ro-tel, one can of water, and half a pack of taco seasoning, 1 onion & garlic cloves. I like to let this cook all day on low in my crock pot.
Debone chicken and save broth
In large bowl mix 1 can of ro-tel, 2 cans of cream of chicken, all the deboned chicken and one or two cups of broth, rest of taco seasoning and cumin (to taste). MIX WELL.
Crush whole bag of Tostito's and pour a layer in the bottom of a baking dish/pan. Save some for more layers and some for the top.
Next a layer of chicken mixture
Next layer of cheese (LOTS OF CHEESE)
**I usually just put one layer of chips, all the chicken mixture, cheese then top with rest of the chips. If your pan is deeper you might be able to layer more than that.
I then pour the rest of the broth all over it. This is important because the chips will soak up alot of liquid.
Bake @ 350 till cheese melts and the top browns a bit.
