Angie's Jambalaya

Ingredients:

1/2 stick of butter (real butter)
1 BIG Onion
1 BIG Green Pepper
1 can of Rotel
1 can of Red/Kidney Beans
2 packages of Smoke Sausages
2 packages of Lipton Red Beans and Rice

Instructions:

Start with.
1/2 stick of real butter to sauté,
1 BIG Onion (hot or sweet)
&
1 Big Green Pepper
Then add 1 can of Ro-tel (Diced Tomatoes & green Chilies.degree of hotness is up to you, mild, medium or hot)
Let everything cook together for a bit.

Then...
add one can of red beans or kidney beans
&
add 2 links(2 packages) of Smoked sausage(Or you can use homemade smoked sausage from venison) *I have also thrown in pork sausage.

Let that cook together for a bit, bring to a boil...

Then add in 2 packages of Lipton Red Beans and Rice.  Any packages of any brand that say Red Beans and Rice will work.  (They also have just a Cajun kind that I have used and added 2 cans of red beans to the mix. )

 On one of the Lipton packages it says to add 2 1/4 (4 1/2 total) Cups of water... now what you've added already with the beans, Ro-tel, butter, etc... is about a cup to a cup and a half of liquid. So I usually just put in 3-3 1/2 cups of water...

Bring to Boil then add the two packages of Lipton Red Beans and Rice.  Let come back to a boil for a minute or two then cover and let the rice cook on very low or off even, till done.

I then add Mushrooms at the very last, because I like mine a little firmer and not over cooked. You can add them any time during this process.

Let cool and EAT!
